Bring a small pan of water to a boil, switch off the heat, lower in the eggs, cover, and leave for 7 minutes.
tip:Room-temperature eggs give the most reliable soft centre.

Toast the bread
Toast the bread until crisp and evenly golden, then trim the crusts if you prefer the kopitiam style.

Fill and serve
Spread kaya on two slices, add cold butter, close the sandwiches, and cut each into fingers. Crack the eggs into a bowl and season with soy sauce and white pepper.
